Maddur Vade



Ingredients: All purpose flour (Maida) 1/2 cup, Semolina (Rawa) 1/2 cup, Rice flour 1/2 cup,
Finely chopped onion 1 cup, Coriander leaves finely chopped and curry leaves(if available) 4-5 spoons, finely chopped green chilies around 4 spoons. Oil to deep fry and salt.

Method:

1. Mix all the above ingredients. Add salt to taste.
2. Put 4-5 t-spoons of hot oil and mix the mixture thoroughly so that the salt distributes evenly.
3. Divide the flour into 6-7 portions.
4. Take one portion and just sprinkle water and mix to to make a thick dough. (Do not pour water just sprinkle it)
5. Make balls and flatten it (just like you pat rotti) on a plastic sheet(I did not smear oil or water on plastic sheet). Make it thin(not ver thin).
6. Heat oil in a pan. When it is sufficiently hot, put the flattened vade and deep fry.
Do not turn around immediately. Allow it to become little hard, otherwise it will break of.

Also water should be added to make a thick dough just before deep frying it.
