Bread and Plum Pudding







Ingredients

For the bread layer :
10 slices wheat bread, each cut into triangles
2-3 tbsp honey
5-6 tbsp chopped or slivered almonds
1 1/2 cup milk

For the sauce :
15-18 plums (small to medium sized)
17-18 tbsp honey

Preheat oven at 180 C.


Method :

For the sauce :
1. Wash the plums and stone and chop them.
2. Mix the chopped plums and honey and keep over low heat. Cook for about 10 mins till juices flow, stir in between. The plums should soften and must mix well with the honey. Set aside.

For the bread layer :
1. In a bowl mix together the milk and 3 tbsp honey.
2. Dip half the bread triangles in this sweetened milk and arrange at the bottom of a shallow baking dish. Pour half the plum sauce over the slices and sprinkle half the almond slivers. Repeat this step with the remaining bread, sauce and almonds. Pour in the remaining milk.
3. Place in a preheated oven and bake at 180 C for 25 to 30 mins till hot and bubbly.
4. Serve warm or cold with cream ( We had it without the cream )
